RECIPE - We have some veggies coming for Christmas and I woke up with a recipe idea for them which I think we night also enjoy with our goose. Pound SFF Cubub, SFF Vanilla, SFF Raw Cocoa and SFF cashews in a mortar with some SFF salt and SFF long pepper. Stew some yellow tomatoes down with plenty of SFF olive oil strain this through a mouli add the spices mix and stew again for at least 15 mins add what might be missing and add to roasted pumpkin when its tender. Continue roasting whilst im serving the goose and then serve with some really fluffy rice and a dollop of soured cream spinkle generously with parsley, chives and corriander leaf. Sounds delicious to me ill tell you how it works after Christmas with some idea of the quantity I use. I like the idea of a sort of Indonesian mole.

Well my first try at the idea above was far to strong so i had to very quickly make a second batch whilst the gravy was reducing. The texture was great but I went mad with the cubub. The final result was declared delicious and consisted roughly speaking of 1 t spoon of cubub, 6 cocoa kernals, about 6oz of cashews 2 long peppers and an egg cup full of olive oil. This was made into a sort of pesto in the mortar and then added to a tin of plum tomatoes because id only got frozen yellow tomatoes available having had to chuck the first batch. I boiled it for a couple of minuites then spread it over my pumpkin moons and quickly blasted it whilst i carved the goose. I sprinkled some Bali pyramid salt over at the last minute because I forgot the salt in the pan.

I made pumpkin soup with lots of muntock white pepper with the rest of the pumpkin and it was just delicious. I used loads of pepper and this time it worked. I think the problem with cubub is it needs to be part of a strong blend of spices although it works well in rattatouille.
I've recently been frying apples in maple syrup for our childrens breakfast they love it, then served with their grapenuts and warm milk.

But my most exciting moment over the holidays was when one of our hens laid the first egg right outside the front door would you believe! It was just delicious.

Kitul palm sugar and kitul palm syrup from Sri Lanka are said to be one of the best in the world, the treacle made from the kitul palm is wonderful with Greek yogurt or buffalo curd yogurt.

Just been told that kitul is the fishtail palm of India to Malay Peninsula sap yields a brown sugar (jaggery) and trunk pith yields sago.

Sri Lanka also has a very good coconut vinegar.
